A Father's Day Tradition: Outdoor Grilling Around a Campfire

Father's Day is Sunday, June 19th. Whether you're heading to the mountains or celebrating in your backyard, be sure to keep a few grilling essentials on hand so everyone can enjoy the time-honored tradition of cooking around a campfire and sharing delicious meals together.

Skillet meals are quick, versatile, and perfect for campfire grilling. Here’s one of our favorite breakfast skillet recipes. Be sure to grab some tortillas to make delicious breakfast burritos! This recipe is highly customizable: swap proteins (try diced ham or slicing up your favorite sausages), or any veggies of your choice to easily turn this into a lunch or dinner skillet!

Breakfast Campfire Skillet

  1. Cook bacon in a large cast-iron skillet over medium-low, stirring occasionally, until crisp, 8 to 10 minutes. Transfer bacon to a paper towel-lined plate using a slotted spoon; reserve drippings in skillet.
  2. Add 1 tablespoon of oil or butter to drippings; increase heat to medium-high. Add potatoes in a single layer; cook, covered, undisturbed, until potatoes are crisped on bottoms, about 7 minutes. Uncover; stir potatoes, and stir in remaining 1 tablespoon oil or butter. Cook, covered, until potatoes are well browned, about 5 minutes.
  3. Uncover skillet; create 4 wells in potatoes using back of a spoon. Crack 1 egg into each well. Sprinkle entire skillet with salt and pepper. Sprinkle potatoes with cheese, being careful not to cover eggs with cheese. Cook over medium-high, covered, until cheese is melted and egg whites are set but yolks are still mostly runny, about 3 minutes. Sprinkle with cooked bacon and serve.
  4. Optional: Heat a tortilla on a hot pan for 30 seconds-1 minute on each side.  Add skillet mixture and wrap into a breakfast burrito for easy eating around the campfire!
