With a little planning, you can skip the caffeine jitters and dive into deliciousness instead. Pesto Goat Cheese Eggs
Ingredients
- 2 tablespoons Classic Foods Pesto
- 2 eggs
- 2 pieces Seattle Sourdough Bread
- 2 ounces LaClare Creamery Herbed Goat's Cheese
- pinch of kosher salt
- pinch of ground black pepper
- pinch of red pepper flakes
Instructions
- Heat a medium frying pan over medium heat. Once hot, spread the pesto in a thin layer across the pan.
- When the pesto is warm, crack the eggs into the pan. Sprinkle with salt, pepper, and red pepper flakes. Cook the eggs for 4 to 5 minutes or until the whites are set and no longer translucent.
- Meanwhile, toast the bread and spread the goat cheese on it.
- Remove the eggs from the pan and place them on the toast.
- Serve immediately and enjoy!
Pesto Caprese Salad
Ingredients
- 1 pint Grape or Cherry Tomatoes
- 1 teaspoon Salt
- 8 ounces Mozzarella, balls or cut into bite-sized pieces
- 2 Tablespoons Classic Foods Pesto
- 2 to 3 Tablespoons Extra-Virgin Olive Oil
- Balsamic Glaze (drizzle on)
- Fresh Basil
Instructions
- Cut grapes in half. In a large bowl, add tomatoes. Sprinkle with salt. Drain then toss fresh mozzarella balls or pieces, pesto sauce, olive oil, balsamic glaze, and fresh basil into the bowl. Mix well and season to taste.
- Use your pesto caprese salad as a topping on a bed of your favorite salad greens or some crusty French or Italian bread!
- Layer with your favorite salad ingredients in mason jars for a great grab-and-go lunch or dinner.
Cinnamon Pear Overnight Oats
Ingredients
- 1 medium pear, sliced or chopped to preference
- 1 ¼ cups milk of your choice
- 1cup old fashioned rolled oats
- ¾ teaspoon ground cinnamon
- 1 tablespoon chia seeds
- 3 teaspoons maple syrup
- ¼ teaspoon sea salt flakes
- Optional: Nuts or Blue Skies Granola
Instructions
- In a medium-sized bowl, add all of the ingredients.
- Mix well until everything is well combined.
- Cover the bowl with clingwrap, or divide the mixture into two glasses or mason jars and cover. Refrigerate for 6 hours or overnight.
- Serve as is or with toppings of your choice.
Greek Yogurt Parfait
Ingredients
- ¾ cup Ellenos Unsweetened Greek yogurt
- ¼ cup berries or any other fruit cut into small 1-inch chunks
- ¼ cup of your favorite Blue Skies Granola
- Optional: Honey or maple syrup for drizzle/sweetener

If using a sweetener, mix it with Greek yogurt in a small bowl until fully combined.

To layer the yogurt parfait, place half of the yogurt at the bottom of a mason jar or a bowl. Top it off with half of the fruit and half of the granola. Cover them with the rest of the yogurt and top it off with the rest of the fruit and granola.

If preferred, finish it off with a drizzle of honey or maple syrup. Serve immediately.
