Patriotic Berry Popsicles

The simplicity of berries and cream transformed into a refreshing frozen dessert.
Ingredients:
- 3 cups vanilla Greek yogurt
- 1 cup fresh strawberries, hulled and chopped
- 1 cup fresh blueberries and/or blackberries
- 3 Tablespoons heavy cream (can be omitted for a lower-calorie option)
- Honey or maple syrup (optional, to taste)
Instructions:
- In a blender, puree the blueberries until chopped but still chunky (large pieces add visual interest to the popsicles). Taste and add a small amount of honey or maple syrup if additional sweetness is desired.
- Gently mix the sweetned blueberry puree with 1 cup of the greek yogurt and 1 Tablespoon of heavy cream. It doesn't have to be perfectly uniform, some variation can be really pretty here.
- Pour the blueberry puree into the bottom third of the popsicle molds. Freeze for about 30 minutes to set the layer. While that freezes, you can prepare the other layers.
- Mix 1 cup of Greek yogurt with 1 Tablespoon heavy cream and the sweetener of your choice (if using).
- Carefully pour or spoon the vanilla Greek yogurt mixture on top of the set blueberry layer, filling another third of the popsicle molds. Freeze for another 30 minutes.
- In a blender, puree the fresh strawberries until chunky. Taste and add a small amount of honey or maple syrup to adjust sweetness.
- Mix the sweetened strawberry puree with the remaining cup of Greek yogurt. (Again, swirls are pretty!)
- Pour the strawberry puree on top of the set Greek yogurt layer, filling the molds almost to the top, leaving a little space for expansion.
- Carefully insert popsicle sticks into the center of each mold and freeze for at least 4-6 hours, or overnight.
- Once fully frozen, gently pull the popsicles out of the molds and serve immediately.
Now you have a delightful batch of red, white, and blue patriotic popsicles to celebrate Independence Day with a refreshing treat!
