Recipe: Apple & Beet Salad

Nourishing fall harvest ingredients like fresh apples, arugula, and beets come together in an easy, delicious, healthy salad that's perfect for lunch or a dinnertime side.
Ingredients
For the Salad:
- 1/2C Albina Sweet & Salty Hazelnuts
- 4C Arugula or green of choice, loosely packed
- 2C Roasted Beets
- 2C Apple large dice, about 1 large apple
- 1/4C Blue Cheese or Goat Cheese crumbled (optional)
For the Vinaigrette Dressing:
- 4Tbs Extra Virgin Olive Oil
- 2Tbs Apple Cider Vinegar
- 3tsp Maple Syrup
- Pinch Salt
- 1/2tsp Dijon Mustard (optional)
Instructions
For the Salad:
- Assemble the salad: arrange the greens first, then layer on your beets, apples, cheese, and nuts. Drizzle the dressing over the salad, to taste, add a few fresh pepper grinds, then serve right away.
For the Dressing:
- Into a jar with a tight-fitting lid add the extra virgin olive oil, apple cider vinegar, maple syrup, a pinch of salt and dijon mustard if using . Shake vigorously to create an emulsion.
- Dressing may be made up to three days in advance. Store at room temperature.
