Odds & Ends Salad

Turn odds and ends from your fridge into a fresh, colorful salad! It's a great way to use up small bits of leftover produce.
Ingredients:
- Any leafy greens (lettuce, spinach, arugula, kale, cabbage) - mix them together for added texture and flavor
- 1 cup assorted chopped veggies (bell peppers, cucumbers, shredded carrots, cabbage, etc.)
- ½ cup fruit (apple slices, berries, dried cranberries, etc.)
- ¼ cup nuts or seeds (almonds, sunflower seeds, pecans)
- ¼ cup cheese (feta, blue cheese, shredded cheddar)
- ½ cup protein (grilled chicken, hard-boiled eggs, chickpeas—optional)
- Dressing of choice (balsamic vinaigrette, ranch, honey mustard, etc.)
Out of dressing? Whip up your own using this simple, customizeable recipe for homemade vinaigrette.
Instructions:
- Chop everything into bite-sized pieces.
- Toss greens, veggies, fruit, and protein in a large bowl.
- Sprinkle with nuts, seeds, and cheese.
- Drizzle with dressing and toss to coat.
- Enjoy immediately.
