Pantry Cleanout Stir-Fry Recipe

Got random veggies and leftovers hanging out in your fridge? A simple easy stir-fry is the perfect way to use them up!

Ingredients:

  • 2 cups assorted veggies (bell peppers, broccoli, carrots, cabbage, etc.)
  • 1 cup cooked protein (chicken, beef, tofu, shrimp)
  • 2 cups cooked rice or noodles (optional)
  • 2 tbsp soy sauce or tamari
  • 1 tbsp sesame oil or vegetable oil
  • 1 tsp garlic, minced
  • 1 tsp ginger, minced
  • 1 tbsp honey or brown sugar (optional)
  • 1 tbsp rice vinegar or lime juice
  • 1 tsp chili flakes or sriracha (optional
  • Sesame seeds and green onions for garnish

Instructions:

  1. Heat oil in a large pan or wok over medium-high heat.
  2. Add garlic and ginger, stir for 30 seconds until fragrant.
  3. Toss in vegetables and cook until tender-crisp, about 5 minutes.
  4. Add protein and stir to heat through.
  5. Pour in soy sauce, vinegar, and sugar or chili (if using)
  6. Stir to coat vegetables and protein with the sauce.
  7. Garnish with sesame seeds and green onions. Serve hot with rice or noodles.
