Pantry Cleanout Stir-Fry

Got random veggies and leftovers hanging out in your fridge? A simple easy stir-fry is the perfect way to use them up!
Ingredients:
- 2 cups assorted veggies (bell peppers, broccoli, carrots, cabbage, etc.)
- 1 cup cooked protein (chicken, beef, tofu, shrimp)
- 2 cups cooked rice or noodles (optional)
- 2 tbsp soy sauce or tamari
- 1 tbsp sesame oil or vegetable oil
- 1 tsp garlic, minced
- 1 tsp ginger, minced
- 1 tbsp honey or brown sugar (optional)
- 1 tbsp rice vinegar or lime juice
- 1 tsp chili flakes or sriracha (optional
- Sesame seeds and green onions for garnish
Instructions:
- Heat oil in a large pan or wok over medium-high heat.
- Add garlic and ginger, stir for 30 seconds until fragrant.
- Toss in vegetables and cook until tender-crisp, about 5 minutes.
- Add protein and stir to heat through.
- Pour in soy sauce, vinegar, and sugar or chili (if using)
- Stir to coat vegetables and protein with the sauce.
- Garnish with sesame seeds and green onions. Serve hot with rice or noodles.
